Cooking Wild Greens

Today I made some wild greens, Xorta, with olive oil and lemon, mmm...



The fields here are full with this delicious greens, ready to be picked and eaten!

   

You collect the tops op the plants just before the flower will blossom.



You wash them well to get rid of all the snails and sand.




Boil a big pot of water.



Cook the Yummy greens for 10 minutes.


 Strain them from the water, add olive oil, lemon juice, salt and pepper, eat!
Mmmm...

  2. I don't know the name of the plant, there are many kinds of greens people collect and eat here, this one is very tasty because it has not a bitter taste as some others, it's really soft and nice!

  3. Oh that xorta looks delicious! I have no idea either about the English name, but I have eaten it on Rhodes too!
    I was just talking with my boyfriend about the spring bloom in Rhodes, can't wait to see it at the end of the month! :) Here in the Alps the woods are covered in primroses and other lovely spring flowers!
